I was wondering, which ship classes will have the greatest change texture-wise for the full v3 release?

puh, good question currently we focus on completing the borg instead of redoing older stuff, but there will of course be some redos, but i dont have one in mind at the moment

~600 + ~700 = ~1300, as opposed to Optec at ~1900.
