Okay... I don't get why in the world the name is so popular! I can name 3 individualy designed Excalibur class starships! So I am thinking about giving these guys sub classes! I just want to know exactly which we are talking about. So when you mention the "Excalibur". Put a the sub-class in parenthesis or brakets.
Excalibur Class (Washington Sub-Class):
This is the original! The first that I know of. Unlike most large ships this one was built as a large support ship. Given the Transwarp refit it also made a preferable battleship as well as a vessel to transport survivors of combat back home. If I were to put this in FO I'd prefer the Transwarp refit and slam it into the mixed tech yard. The first 2 attached images are to remind you of what it looks like.
Excalibur Class (Tiberious Sub-Class):
Here we have a rather newer ship that just looks like a pimped up Constitution. But they call it an Excalibur so I won't fight with them. But I personally would never prefer this ship in Armada... EVER! Too much of a kitbash!

Excalibur Class (Lakota Sub-Class):
This is a really good lookin ship. I'd like to have it ingame anyday. Now a lot of you are wonderin where this came from? Two files feature it for SFC3. I like it because if the Twin deflector system which can grab a good bonus for FO. The last image is a preview but there is also a link to the SFC3 version for those who can possibly build an FO version.

That 'Lakota' version looks like a TMP-Era Excelsior-II...the Excelsior family is bigger than I thought.

It kinda does. The nacelles look a bit more forward but the rest is somewhat in there I guess.

Sad to say that some people cannot refrain from the double usage of names.
The third ship in your list (aka Lakota Sub-Class, Excalibur Class X-Cruiser, Starfleet Command III Downloads, Starfleet Command III SFC2 EAW)
is a fan made modernised version of the Lexington Class which was made originally for the game Klingon Academy (post TMP, but pre TNG timeline wise)
Quoting from Klingon Academy:
L E X I N G T O N C L A S S
C O M M A N D C R U I S E R ( F C C )
The Lexington class Command cruiser is an offshoot of the Excelsior class Battle Cruiser. It incorporates many of the Excelsior's looks into a slightly lighter armed ship which is the perfect command ship for many fleets which don’t need massive amounts of firepower but do need good command ships. The Lexington class is rumored to be a possible replacement for the slightly older Constitution (refit-a) class but this is unlikely because the majority of the Constitution class ships are now undergoing refits which make them into much better ships. The new niche for this class of ship is probably going to be the deep space exploration role because of their Class IX sensors. By giving the Lexingtons this role, Excelsior class ships are freed up for more important work. The QCB added to the Lexington class also gives her added firepower if she ventures into any sort of combat situation.
SPECS:
Length: 397 meters
Mass: 340,000 metric tonnes
Crew: 550
Marines: 60
Maximum Impulse: 1,410 kellicams per second
Hull Rating: 2.3
Shield Rating: 69.7
Maneuverability Rating: .30/.16
WEAPONS:
Fore: 4 phasers, 2 photons, QCB
Port/Starboard: 2 phasers each
Aft: 2 phasers, 1 photon
So according to this Game this ship in between the Constitution and Excelsior Class
