Well you just have to be careful, as if you feed your Metapod bread just before it evolves you'll end up with Butterbread rather than Butterfree...

The same thing that causes us to grow from little'uns into big'uns or pigs into bacon.  You know that.  If you don't call it the natural process of life for that certain creature, then I would also contribute it to a form of micro-evolution.

also what happens if we hit 201 instead of 200 or 199 before it gets locked?

if we hit 200+ dose my mew or celebi evolved into a snorlax??
