I understand this... but personally I don't care as long as there is a Kelvin-II made.... doesn't matter if classed or typed to me.

Type and class and both ways to describe a particular class of starship, i.e.

The Phoenix (NOT the one in my sig) is a Nebula-class starship, we know that canonoically from the shows. So on Memory-Alpha, and by everyone else that class of starship is called Nebula-class.

But if no-one knew (canonoically) that the Phoenix was called a Nebula-class starship, that class of starship would be called "Phoenix-type" because they would know what else to call it.
Same with the Valdore, it is the only named ship of that class known, so we call it "Valdore-type"

Say that in a later movie the class was given, would Mem Alpha hunt down every incorrectly named file on the internet and force a rename?

Memory Alpha governs their info, they would change their info accordingly. Not only do they mostly ignore other sites, it would be pointless because most sites ignore canon in favor of fan-facts anyway.
